The name Panchito’s comes from my father’s name and my son’s name, which is used in Mexico as a nickname for the name Francisco. It was an inspiration that was born when I first arrived in Gothenburg and saw some food trucks in the center. I imagined my own food truck with the name Panchito’s and thus convey the flavour that I grew up with my parents. From my father I got the inspiration for the beans, which I used to eat with him when sometimes we didn’t even have money to buy meat. From my mother I got the seasoning to marinate meats since my mother has owned different restaurants and thanks to that I have learned her skills.
